Herbal Bone Broth

Whether you're a seasoned herb aficionado or just starting your journey into the world of plant-based nourishment, this Vegan Herbal "Bone" Broth is about to become your new favorite ritual. I always have this bone broth on hand and will often make larges batches at a time. Pro tip: this bone broth freezes well and you can also pressure can it so that it's shelf stable!

This herbal bone broth is packed and I mean packed with all of the herby goodness you need to feel nourished and healthy. You can drink this by itself, or use it as a base for your soups, stocks, and curries.

 

Ingredients:

  • 1 large onion, roughly chopped
  • 2 carrots, chopped into large chunks
  • 3 celery stalks, roughly chopped
  • 4 cloves garlic, smashed
  • 1 tablespoon avocado oil or your oil of choice
  • 1 tablespoon ashwagandha root (dried)
  • 1 tablespoon astragalus root (dried)
  • 2 sprigs fresh rosemary or use dried
  • 1 tablespoon thyme leaves (fresh or dried)
  • 1 tablespoon of turmeric
  • 2 bay leaves
  • 1 teaspoon whole black peppercorns
  • 8 cups water
  • Salt to taste

Instructions:

  1. Add everything to your pot or crockpot:

    • Add onions, carrots, celery, and garlic, ashwagandha, astragalus, rosemary, thyme, bay leaves, turmeric, and black peppercorns.
  2. Pour in Water:

    • Add 8 cups of water to the pot, ensuring all the ingredients are submerged. Bring the mixture to a gentle boil. If you are using a crockpot, skip the simmer step
  3. Simmer and Infuse:

    • Stovetop: Reduce the heat to low, cover the pot, and let it simmer for at least 1-2 hours. This slow simmer allows the herbs to infuse into the broth, creating a rich flavor profile.
    • Crockpot: Let the broth cook on low for 8 hours, or high for 4 hours
  4. Strain the Broth:

    • Once the broth has simmered and infused, strain it through a fine-mesh sieve or cheesecloth to separate the liquid from the solids. Discard the solids.
  5. Season to Taste: 

    • Add salt to taste. Start with a small amount and adjust according to your preference.
  6. Store in the fridge:

    • Pour the herbal "bone" broth into jars and store in the fridge for up to a week.
